lasagna rolls

I'm working on a huge post.
Really.
It's so big....erm...it could be TWO posts.
But it probably will be one.

In the meantime, I thought you should see the lasagna rolls I made last night that were so good
that we ate all of them and would have eaten more but I didn't double the recipe so we couldn't.
Nice run-on sentence, eh?
My life is a run-on sentence.

I have errands to run this morning and then I'm going to finish putting that post together.

Here is your lasagna.

Believe it or not, it is a Giardia recipe from Everyday Italian.
The rolled up noodles have ricotta, spinach and prosciutto in them and are sitting in a bed of bechamel sauce and have K's homemade marinara on top of them.

I call Giardia 'Teeth and Teats' but do like some of her recipes. I make a bechamel lasagna from Deborah Madison's many cookbooks (It's an older one) and it is A LOT of work. Might just switch to this one - will K send some sauce, poste hasty?!

I have a problem with Ms. Di Laurentis' first name. Every time I read "Giardia" I think of the parasitic disease that causes the lasagne to spew across the room.

But this recipe looks SO good it's a risk I'm willing to take.

Really?
Not a week goes by that there isn't bechamel on something in our house, which probably explains the waistline issues.
